I had wanted to do an experiment each month this year, but then life got busy and I got sick and we had to take a few months off from it. But now I'm back at it and for the month of April we're going...are you ready for it...all you family members and friends get ready to roll your eyes at me...we're going VEGAN!!!
I was just going to do it on my own but Justin insisted that if I'm doing it the whole family should do it to make it easier meal planning wise. I'm not sure how strict I'll be with the boys on it, I'm thinking a little yogurt or cheese here and there for them will probably happen. Our one big exception is that we will all still eat eggs. Mostly because we have our chickens and having fresh eggs is awesome. Also it's a treat that Justin makes scrambled eggs for the boys on the weekends, so we'll continue that.
I'm really excited about this. We've done periods of not eating meat and really we don't eat all that much meat anyway, but going vegan is a whole different story! I'm interested to see how we'll feel, if we'll notice any kind of a difference. And I'm interested to see what (if any of it) that we'll continue doing after the month is up.

I didn't roll my eyes...but I DID think...I bet the library has cook books!! Then, I resited doing a search on thier website. Learning new ways to cook is fun.
First meal: bean sprouts and a plate of mashed yeast.

We did it for a while. I finally gave it up for three reasons, Chad wouldn't go for it, I could never get used to Tofu, and It's really hard to find good sources of protein that are still relatively low in fat and you can really only eat so many beans before you feel like you'll pop.... In any case, I did feel much better on the Vegan diet, oh, and you can get soy yogurt and soy cheese at fred meyer and the oly food co-op, my kids didn't notice a difference in things like grilled cheese, but the shreds are pretty much terrible. And I have some great recipes you can try =)
