Eating at home is way easier. Planning ahead is key.
Thought I'd share our menu for this week. Most of the recipes are from these cookbooks:


~nori wraps
~mushroom topped potatoes and green salad
~portabello mushrooms and shredded brussel sprouts (I've never eaten a brussel sprout so I'm a little worried about this one!)
~Pinto bean soup and bread
~Moroccan cous-cous
~veggie burgers and sweet potato fries
I've still got to figure out some lunch ideas. I'm struggling with packing Justin's lunches. I realize now that I sent him a lot of meat and cheese sandwiches!
Justin and the boys are "off the vegan wagon" I think. If I cook vegan they eat it, but otherwise they eat like normal. I currently have no cows milk in the house and I honestly don't think the boys have missed it.
We're almost half way through the month! Not sure what my final thoughts will be on this experiment yet. I can see myself continuing to eat vegan and I can also see myself going back to eating how I was. Which would be fine, we eat pretty healthy anyway so I wouldn't feel like I was failing at all.

Where did I miss WHY you are trying to eat vegan? I am so curious!
Sara I don't really have a good reason. I'm trying a different experiment each month and I've heard a lot of benefits of eating vegan. So I thought I'd try it out for a month. I mostly like the challenge of trying new things like this, it gives me something to do and focus some energy on. :)
